‘Tis the season…

Letters to myself. That is all this blog currently is, seeing as how I don’t have any readers, yet.

My family and I are getting ready for Christmas. Last month we moved 400+ miles and I am now that far away from any of my own blood relatives. The upside is that now we are much closer to my in-laws and my step daughters, so at least I do not feel completely like a nomad.  The move has however, changed the feel of the holidays for me this year. It’s strange decorating and cooking when I know that so few people will see or eat any of it.  We also have no outside decorations at all this year, due to all of our extension cords being in storage. (Epic fail, forgetting to bring those!) 

In an effort to keep myself and my 3-year old daughter busy, we attempted our first gingerbread house yesterday and that was an absolute disaster. The thing completely crumbled when we put the roof on. So no pictures of that, it would just be entirely too embarrassing. If anyone happens to read this, maybe you could comment with a good recipe for gingerbread that actually hardens enough? Or any tips as to why my gingerbread walls did not hold up under the weight of the roof?

For today, this is all I have to report. My mother and aunt are visiting Friday and will stay for 5 days (First visitors from home!) so I will spend the majority of this week trying to make my home look like something out of the pages of a magazine. An impossible feat, but one I will attempt nonetheless. 🙂

Nothing like the first time…. (Slow-cooked Salsa Chicken and rice)

 So… This may wind up being the most ridiculous thing I’ve ever done. But, I’m always up for trying something new, so here we goooooo….

My intentions for this blog are to (1) give me something to do aside from cooking, cleaning and wiping noses/butts (great visual, huh?) (2) chronicle my life and my kids lives, (3) be an artistic outlet and (4) hopefully, give some hope and information/recipes to other moms/wives embarking on similar journeys.

Today I’ll start with a very simple – and cheap – recipe that my

  sister shared with me. It is also what we’re having for dinner tonight and since nothing much else interesting is going on today, I figured why not let this recipe be my first post 🙂

Slow-cooked Salsa Chicken with Rice


 3 Boneless skinless chicken breasts
1 Jar mild salsa
1 yellow onion
3 cups instant white rice
3 tblsp butter
1 tsp salt
2 green onions, sliced into rings

Cut chicken into large pieces, but no thicker than 1/2″ or so.  Slice onion into thin

  rings. Place chicken and onion in slow cooker and cover with the entire jar of salsa. Cook on low for approximately 4 hours, or until chicken is done. Once chicken is done, prepare rice according to directions on package and add butter and salt to the rice after it is cooked. Serve the chicken over the rice. Garnish with sliced green onions. Voila! That is all. (haha) Now, the hardest thing is trying not to eat this delicious heavenly-smelling concoction before the husband gets home from work… And trust me, this is easier said than done!
